Banana Nut Bread Recipe

This unusual banana nut bread recipe derives its unique taste from ripe banana and dark beer, as well as from dates, fresh ginger root, walnuts, cloves, cardamom, allspice and cinnamon. If you have trouble finding dates in your area, you can substitute them with raisins in this banana nut bread recipe.

This banana nut bread recipe will result in 2 medium loaves and be enough for at least 30 servings.

Banana nut bread recipe – ingredients

  • Grease for the loaf pans
  • Banana, enough to produce 1 cup of mashed banana
  • 2 eggs
  • 2 cups of brown sugar (packed)
  • 1 tsp of vanilla extract
  • 2 tbsp of vegetable oil (only necessary if you want a more moist bread)
  • 1 tbsp of ground cardamom
  • 1 1/2 tsp of ground cinnamon
  • ½ tsp of ground cloves
  • ½ tsp of ground allspice
  • 3 cups of all purpose flour
  • 2 tsp of baking soda
  • 1 tsp of salt
  • 2 cups of dark beer
  • 1 ½ cup of chopped walnuts
  • 2 tbsp of all purpose flour
  • 2 cups of pitted and chopped dates
  • 2 tbsp of fresh ginger root, minced    

Banana nut bread recipe – preparation

  • Preheat the oven to 350° Fahrenheit.
  • Grease two 9x5 inch loaf pans.
  • Mash banana until you have 1 cup of mashed banana
  • Place mashed banana in a large bowl and add eggs, brown sugar and vanilla extract.
  • If you want to make the bread moister, you can add 2 tablespoons of vegetable oil to this banana nut bread recipe.
  • Ground cinnamon, allspice, cardamom and cloves unless you have purchased grounded variants.
  • Sift together flour, baking soda, salt and the grounded spices (cinnamon, allspice, cardamom and cloves) in a separate bowl.
  • Pour the flour mix and the dark beer into the mashed banana mix and stir until you have a smooth banana nut bread batter.
  • Chop walnuts until you have 1 ½ cup of chopped walnuts.
  • Toss the chopped walnuts in 2 tbsp of all purpose flours.
  • Pit and chop dates until you have 2 cups of pitted and chopped dates.
  • Mince fresh ginger root until you have 2 tbsp of minced root.
  • Add the chopped and tossed walnuts, the dates and the ginger root to the banana nut bread batter and stir until all ingredients are well mixed.
  • Pour the banana bread batter into the two loaf pans.
  • Bake in the oven at 350° Fahrenheit. Bread made from this banana nut bread recipe will usually need around 60 minutes in the oven. If you are unsure, you can do the toothpick test. Insert a toothpick to the centre of the banana bread. When the toothpick emerges clean form the centre of the bread, you know that the banana bread is ready.
